It’s autumn! You know what that means: sweaters! Scarves! Boots! Personality hats! PUMPKIN EVERYTHING! And, of course, it’s the perfect time to cozy up in your warm kitchen and experimenting with new fall dishes. In the spirit of the season, here are three cozy, healthy dinners to whip-up.
Rich Autumn Pork Stew with Beer
This one is a little on the heavier side, but my boyfriend and I made this recipe over the weekend and LOOOOVED it. We used whole wheat egg noodles and added a side salad to up the health factor. It was delicious. Plus, plenty of leftovers for lunch through the week!
I love Dal. Warm, spicy and chock full of fiber and protein. This recipe will make you think you ordered out from your favorite Indian place – but without the long wait for the delivery guy.
Crockpot Red Lentil, Chickpea, Squash Soup
The crockpot is god’s gift to mankind. Chop up your ingredients, throw them in and boom – a few hours later, you have a fully made meal. Best part of this easy cooking technique? It gives you extra time to frolic in some piles of autumn leaves, take selfies with pumpkins or watch more “Friends” on Netflix.
